Cancelling and porting number

I'm on a pay monthly contract whose minimum term expired some time ago. I want to cancel my contract and port my number to a new contract with another network. I'm just trying to figure out what order everything happens in. As far as I can tell it goes something like this:
- I ring vodafone customer services and ask to cancel my contract and be issued with a PAC code (which should happen within 48 hours).
- I sign a new contract with the new network and give them my PAC code.
- When the new network uses the PAC code my Vodafone account is automatically closed.
So basically my phone number is never actually inoperative it's just that for a short period I have two accounts with two different networks and two SIM cards and the number jumps from one to the other at some point?
Seems like silly questions but I'm going to be busy for the next couple of weeks and relying on my phone.
