The number I used to use on EE hasn’t been changed to my pay as you go sim, I requested a PAC from EE on Saturday and went to my local Vodafone shop that day to request the number change to my sim, however it still hasn’t been changed as I can still use my old EE sim with the number, help!

Porting does not happen over a weekend @Kmorby but it really should have settled by now when Vodafone UK used the Pac you gave them to take control of the number.
My suggestion is to call Vodafone UK Customer Services on 191 and they'll escalate this as a possible failed or split port.
Or the Vodafone shop didn't give you a properly working Vodafone Payg Sim Card.
Have you tried putting in the Vodafone Sim Card in your phone and turned the phone Off and On.
