I've ordered an upgrade and it said it would take 1-2 weeks. The upgrade has arrived after a week but now I'm unable to pick it up as I'm away for the next week and a half. Is there a way for the vodafone shop the upgrade has been delivered to to be kept until I return?

You need to collect form the store within 7 days or the upgrade will be returned and cancelled. There is further information on this link : When and how do I collect my order from a store?
It's unfortunate the upgrade arrived a week earlier than expected but you may need to contact Vodafone on your return and reorder.
