there isn't a setting you have or need to activate on your phone or Account.
It's automated when 3G signal is attained.
You should experience a clearer call quality.

I have an iphone which is compatiblem, however is there a way to know when HD voice is in use like does an icon appear on screen or something?

No - nothing appears. There is no way of telling other than by the clarity of the call itself.
