Does the text still show in your sent text messages? If so and it went as an iMessage it would be in blue.
It is possible that you intended the message to go as an iMessage but it went as a normal sms, but that does not explain why it ended up on your partners phone.
What is the timestamp on the message received on the Sony?

@katebadge If you partner tries to reply to the message does it show up as sending to your number?
Since deleting the original message have you done a backup to iTunes? If the latest backup was after sending the original message but before deleting said message you can retrieve the original showing the date by restoring your phone using that old backup.
If you have done a backup since deleting the old message then that option is not possible.
If the old message was still on your phone I could understand some glitch may have resent the message to another contact but as it is not in the phone that seems highly improbable.
Messages do not automatically delete, you have to physically delete them. I have both iMessages and sms messages on my iPhones going back years.

The network does not keep text messages or the context of them.
Is it possible the friend forwarded it onto your partner ? Although it would not show as you.
I have seen discussions in the past where the phone / SIM card has forwarded on messages to other contacts in your contacts list.
Was the message still in your sent list. It maybe in your iCloud back up as texts are saved in them.
One option to try and troubleshoot this is to ask the Vodafone store to supply a new SIM card via a process called a Sim Swap and to try a new SIM card.

A SIM card swop can help and if you feel necessary you can also delete iCloud back ups and start your iPhone as a new device if you restore via iTunes.

I do the same by keeping them for 30 days.
I also have iCloud backup turned on in settings-iCloud- back up- iCloud backup is toggled on and then updates when on wifi.
