Made an insurance claim in September and a new replacement was sent to me and it’s not been used until xmas day as it was given as a gift. Phone started showing battery issues after a few days and only getting 1 hours usage from a full charge. Made an appointment with Apple who have confirmed the back enclosure on the phone is not genuine Apple and the colour doesn’t even match the SIM card entry slot. I have an official statement from Apple confirming this. Need some advice here because I’m worried something else could be fake too.

I assume this was insurance through Vodafone and if so Please call Customer Services asap.
They may question the time frame of your claim of the condition of the iPhone from their date of supply of the phone to present day.

If a phone isn't sent to Apple for repair then it will have 'non genuine' parts. So getting your phone repaired / replaced via Vodafone or any other insurance company (e.g. your bank) that doesn't go to Apple direct will leave you in this situation.
I'm sure Vodafone insurance confirm this though, as them (or any other non Apple company) repairing your device will void your Apple warrenty.

It used to be the case that work carried out by a non Apple repair centre voided warranty but that's now changed @donnyguy
Vodafone would not in my opinion carry anything out knowing this voided warranty. The ramifications would be far reaching.
Its possible the repair centre's carry out certain work or send it on to the Apple engineers.
