Started new Contract with Vodafone. New S8 received today from Mobiles.Co. UK but no SIM Card included. Are they supposed to supply one or do I have to get one from Vodafone?

You are going to need to go back to Mobiles.co. about this, with you being a Mobiles customer, they were responsible for selling and setting up your new contract.
For security reasons, you may find the SIM being sent separately, Mobiles.co will able able to let you know when you can expect to receive the SIM and clarify any other questions you have about your new airtime contract with Vodafone.
