Mine prompted me to swap it over. Once I had started the transfer from my old phone to new phone, it got me to scan my watch and it did the backup and restored everything to my new phone. Very smooth process.
Alternatively you can unpair it before you start, which creates the backup, and then pair this once your new phone is setup and it should ask if you want to restore the backup.
