Vodafone won't be selling the phone outright. You'll either have to go to a dealer such as Carphone Warehouse or directly to Apple.
If you buy from CPW or any dealer, the phone will lock to the first network you use it with and getting unlocked can be tricky. You are much better off getting an unlocked sim free phone directly from Apple.

You could purchase outright from apple (in store or online) and then continue having a SIM only contract. That's what I'll be doing as the Vodafone price plans work out a little bit more expensive in the long term than buying outright.

I am not sure that buying a handset outright something Vodafone offer, the closest thing is PAYG, and iPhones don't tend to be available on that.
If it was doable, I imagine all of vodafone's initial allocation will be required to fulfill the contract pre-orders (and then still be short) so selling it on PAYG wouldn't be an option for a few months.
As mentioned above, your best bet would be direct from Apple, as then it would have the bonus of not being network locked.
