If you purchase the phone from sim free it'll be unlocked out of the box.

Thanks, I would be using the phone on Vodafone NZ first (as I am currently in NZ). I am upgrading my UK mobile number, then sending the phone to nz so i can use it her until i go home.
I would just be purchasing a PAYG sim to use whilst in NZ
Then, when I return home I would plan to put the Vodafone Pay Monthly sim card in.
So, I could do this then if i got the phone unlocked?

The purpose of unlocking is to unlock the phone to all networks both native and foreign.
So if you unlocked it then the phone should accept any SIM card.
Just follow the Networks procedures the phone is locked to in order to request the Unlock.

Are you buying the phone from Vodafone and it is on contract or as a PAYG phone?
If so it needs to be used on the UK network for at least 30 days before you can apply for the unlocking. So you would not be able to use a new phone sent to you in NZ right away.
Have you looked at buying a phone direct from Apple? although the initial layout is more in the long run you save a substantial amount of money.
