Had fibre 500 installed on Wednesday 18th October and it's not missed a beat.
I am intrigued how the WiFi speed fluctuates when testing it on my new phone, using the same app and in the same location in my house but at different times.
There must be several factors why this occurs.
Vodafone chat live just tell me I'm guaranteed 250mbps and deny throttling.

I know laptop to router via cable will produce higher speeds but I'm not interested in that.
It's the WiFi inconsistency throughout the day that makes me curious

Yeah, I get that. So the bottleneck is the WiFi, not the broadband.

One thing that can slow the wifi is other users on the same channel. Like most ISP routers the THG3000 seeme to like channel 36 which is undoubtedly the most crowded channel in the uk. Unfortunately Vodafone thought it wise to take channel control away from the end-user, leaving us with a box we can't do anything with. There are ways around this, including setting the channels straight after a reset, or an old version of the vodafone app from sources I wouldn't trust.

Tested it via cable and surprised that the speed was no different. 🤔

Time for some diagnostics then.
What speeds are you getting over wire? Which server is the speedtest selecting and how does that location relate to you?
Can you ping bbc.com and paste the results?
Can you also run a traceroute to bbc.com, again pasting the results?
