Can I transfer the sim in my Nokia Lumia straight into an iPhone 11 4G ?

If it fits you can.  However, if the SIM is getting old it can start to do some strange things when place in a new phone and you may need a replacement SIM frm here: Replacement SIM cards

Your going to need a Nano Sim Card @Woodwise1 

A Vodafone Highstreet Store can perform a sim swap for you but take some photo ID, or ask customer services to send you a blank Sim card so you can sim swap at home if your particular model of Nokia Lumia take a Micro sim etc.
