If I'm roaming in Republic of Ireland on Vodafone UK PAYG and I don't use my phone to make a call, send a text or use data on a given day, will it be assume that I spent that day in the UK and it won't count as a roaming day or would I need to have the phone switched off so it isn't counted as a roaming day in a four month period? Will only receiving calls or texts on a given day when roaming be counted as a day spent in the UK or as roaming?

According to this link @Bioflowtanks Roaming Charge Checker
If you enter the country and select PAYG there are no additional roaming charges for the Republic or Ireland.
That means you won't need a roaming extra and can continue to use your BVB the same way as you would at home in the UK without the worry or any extra roaming charges.

I thought if I spent more than 62 days over a 4 month period there would be some extra charges.

There is a roaming FUP for the time you are able to use the phone for roaming @Bioflowtanks but not sure if that applies to a country where there are no additional roaming charges. Vodafone certainly would send you a text notification before taking any action and hopefully you won't have anything to be concerned about.
The other alternative is to get a SIM for Vodafone Ireland and keep your UK SIM active for when you return to the UK.
I am sure someone from Vodafone will be able to clarify this for you and most certainly the thread will be picked up by the Team.

I have a dual sim phone with an Irish SIM & UK SIM in it. I mainly wanted to use the UK SIM for receiving calls when in Ireland and occasionally using the "Pay as you go 1" plan in the UK or Ireland.

Hey @Bioflowtanks Our Fair Usage Policy is applied to all our inclusive roaming destinations. So if you use your UK number in the republic for more than the specified time without returning to the UK, you will incur the additional charges.

I do understand that if I roam for 62 days or more in a four month period that extra charges can apply.
On your website is says "If you don't use your phone on a given day, we'll assume that’s time spent back in the UK and it won't be added to your roaming charges."
I'm trying to find out is there a difference between not using your phone and not making a calls/texts or not receiving calls/texts.

Thanks again Mark, I just want to check if I have my phone switched on but I don't use it to make/receive calls/texts whilst in one of your roaming destinations, will this be considered a roaming day?
The extra charges for making calls and texts aren't that much but is the £3.13 per GB a daily charge that could be charged every day I use a small amount of data? I'm going to switch on the "Data Bar" in My Vodafone settings so I don't accidentally use data.
I will be mainly using the Vodafone SIM for receiving calls but not every day.
Occasionally I will get a "Big Value Bundle" or use the "Pay as you go 1" plan in the UK or Republic of Ireland providing I don't get a text alert about extra charges.

Hi @Bioflowtanks 👋 When roaming even if the phone is not used it will be classed as a roaming day as you are not connected to our UK network. The £3.13 charge is per GB so this wouldn't be a daily charge, you can use a data bar to avoid usage or alternatively you can also turn off data roaming within your phone settings.
