It's been over 10 days and I still haven't received my NUC code? Anyone able to help me? It's really important I have a sim too as I'm a carer for a family member

May I ask which phone your requesting to have unlocked ?

I ask as an iPhone isn't unlocked via a Nuc but is instead released via Apple centrally which can take around 30 days sometimes.

Insert an activated alternative network sim card periodically to complete the unlock. Hooking upto iTunes can help.

If it's not an iPhone then as long as Vodafone has confirmed by email that they'd accepted your request it can very occasionally take 10 days to be given a Nhc.

It's an iPhone 11. I have been inserting my giffgaff sim into it but keeps saying "sim not supported"

Ok so it's as I said @chloekay19x 

Apple can sometimes take upto a further 30 days to complete the unlock. 

No Nuc is required for an iPhone.

Just keep inserting an activated alternative network sim card periodically.
