My mum has a Nokia and changed her phone number today. My family have I phones. When we try to txt her, our messages are now sending as an i message. This never happened before her number changed. My husband has tried resetting his phone. No joy. Can anybody help me??

The number won't be brand new. It will be a recycled number and obviously the last user was an iPhone user and didn't de-register the number from iMessage.
You won't be able to do anything about that. All you can do is speak to EE and they'll have to fix it or issue you with a new number.

Hello. Thank you. My son did mention this but e e insisted it was a new number. Clearly not. We will be back to e e tomorrow

There is a faint possibly that's the number EE have given your mum is a recycled number that has not been deregistered from a previous iPhone account before it was recycled.
i would go back to EE explain the problem to them and ask them for a different number and activate and test it while you are instore.

Yes. The situation returns when I put iMessages back on. But at least it's a part solution and I can txt my mum.

No worries.
Did she try the de register link I added. It may / may not help.

Hello. I am going back to e e shop who gave number to my mum as others have also recommended getting number de registered. Hopefully e e will sort out. Thanks for your advice

Try.
Settings > Messages > Toggle on 'Send as sms when iMessage is not available'.
There in no need to turn off your iMessage.
