This is an update to my original post, after speaking to a really helpful Technically minded person at VodFone.

I was able to speak to Gary after getting frustrated with the usual staff on the helpline at Voda, I asked for a manager and Gary was able to assist me with my primary issue, then has tried everything possible to assist me with my WiFi calling issue, over the last 2 days which I appreciate.
His first planned call to me was a perfect example as my phone had locked onto the cellular service thinking that 1 bar of service was good enough, but it was not as the call dropped. In the particular area I was in, I had perfect WiFi coverage and my phone was connected/authenticated to the Wifi in that area.
He agreed with me that this is an issue, reset everything to do with my account as apparently there was a change that happened in March '22 which seems to fall in line with when I started experiencing issues.
I gave him the link to my post including the part from Samsung informing me that the settings are defined by Voda, which he checked for himself and confirmed.
He has asked me to post an update to my original post as I asked if it was possible to allow the same freedom of control as EE does with their WiFi Calling, as opposed to just 'On', we can select as EE allows their users to do, 'WiFi preffered'
If you look at my other post you will see what I mean.
VodaFone, please allow us to have a little more control on how our phones and services work. To be able to select the preffered working state of WiFi calling would be a blessing and this may fix a number of other peoples issues from what I have seen.
The 'One shoe fits all' approach DOES NOT work.
